Stir Fried Ramen with Shitake Mushroom Cube and Mustard Green

I have stopped eating instant noodle since 8 years ago because of its unhealthy ingredients. But when I saw this in BMS Organics, I can't resist buying it.

After all, I do love the taste of instant noodles. Now I don't have a reason not to eat instant noodles anymore.

The taste matches the normal commercial instant noodle out there, just that this is a lot healthier. This is the Original flavour. There are 2 more flavours that are Spicy and Less Spicy but I prefer the Original flavour more.

Ingredients (serve 1):
  • 1 packet O'Kid instant noodle (or any other brand)
  • 1 clove garlic, minced
  • 1/2 tbsp dark soya sauce
  • 1/2 tbsp oyster sauce
  • 1/2 tbsp grape seed oil
  • 1 bunch mustard green (medium), cut into bite-sized
  • 25g shitake mushroom cube, cut into strip
  • black pepper to taste
Method:
  1. Cook noodle until 90% al-dente with 1/3 packet of the seasoning. Drain the noodles but reserve a little of the noodle water, set aside.
  2. Heat oil in a wok and fry shitake mushroom cube over medium heat. Add another 1/3 of the packet seasoning.
  3. Add garlic and stir fry until golden brown. Add mustard green and the remaining packet of seasoning. Stir fry till wilted.
  4. Add noodles, dark soya sauce, oyster sauce and pepper. Stir till mixed.
  5. Remove from heat and serve.
