Melt-in-the-mouth Butter Cookies

Truly melt in the mouth...

This is a very simple recipe, only requires 4 ingredients. The texture is truly melt in the mouth while the surface is still slightly crunchy as you bite into it. The baking time may need to be extended to brown the cookies nicely. The cookie batter was very soft, it's easy to pipe, but the cookies can't hold their shapes well while baking in the oven. Probably it's due to the high butter contents.

I guess I would have to place the cookies tray at the bottom of the oven next time, then slowly move up to the top of the oven, so the shapes of the cookies can hold better. I will consider baking these again next Chinese New Year and will use piping bag next time instead of a small plastic cookie piper. It was so messy using the cookie piper...haha...

The recipe below is adapted from Nasi Lemak Lover - Butter Cokies and it makes about 50 pieces depending on the size of the cookies that are being piped.
  • 200g salted butter
  • 50g icing sugar 
  • 150g all purpose flour 
  • 50g corn flour 
  • Chocolate chips (for decoration in the middle of the cookies)
  1. Beat butter and icing sugar till creamy.
  2. Sift in flour and corn flour, mix well to a soft dough
  3. Scoop dough into piping bag and pipe dough evenly on baking tray. (Do not pipe big size cookies as they will expand when baking in the oven.)
  4. Bake at preheated oven at 180 C for 13-15 minutes or golden brown.
Need to brown the cookies further and the
pattern needs to be more visible
